Ok, so here is the recipe everyone has been asking for… my go to, easy, tasty…

Baked Artichoke Dip.

I know, it sounds gross right, but believe me when I say it’s amazing!!!

I have taken it to a few parties over Christmas and New Years, and every time it gets all eaten up!! It’s very yummy, moorish, and a comfort food…which naturally means it’s absolutely terrible for you. So shhhh! ?

I like to scoop it out with carrot or celery sticks to even out it’s heaviness, but crackers, grissini and wafer crackers also work! It is a bit more substantial than most dips, so is great for entertaining, if there is a wait before dinner, or as a stand alone afternoon tea or snack… ?

To make, I have mixed two recipies…one from here, and the other from the Thermomix Festive Flavour Book (my favourite book EVER btw, and a ‘must get’ if you have a Thermy)

Note: it can also be made in a blender real easy!

I use:

  • 130g Parmesan Cheese ?
  • 1 garlic clove
  • 250g of good mayonnaise
  • 200g marinated artichoke hearts ?
  • Small handful of fresh parsley
  • Teeny tiny pinch of cayeene pepper ?

Method:

Preheat oven to 180 degrees.

Blend or grate parmesan and garlic until very fine

Add mayo and artichoke hearts and blend until still slightly chunky (see photo below)

Spatula mixture into an oven proof dish…I like to use a pie dish (or similar size) to make the dip have more surface area, as the browned top and edges are the yummiest!

Sprinkle with chopped parsley and cayeene pepper then bake for 30 mins on 180 degrees or until golden.

Serve warm with vegetable sticks, crackers and the like…

I would have a photo of it as it was served, but it went way too fast!!!

Definitely try this, as it’s super easy and tasty…but please, try to not eat it all yourself!!! ?

It will be hard!
